Cinnie's Famous Cookie Power

Ingredients:

Love!

1 c butter

1 c brown sugar

½ c white sugar

6 eggs

1 t baking soda

1/2 c tahini

1/2 c nut butter

1/2 t salt

1/4 c brewed coffee or espresso

1 t vanilla

4 C whole wheat flour

6 oz each of butterscotch, vanilla, & chocolate chips

1 c chopped nuts

Sesame or poppy seeds, if desired

Whole nuts, like a walnut, to garnish, if desired

 

       Preheat oven to 350 degrees

       Line an ungreased cookie sheet with parchment paper

       Using an electric mixer, mix sugar and butter together until it’s fluffy and soft

       Add eggs one at a time and continue mixing

       Add tahini, nut butter, coffee, and vanilla and mix until combined

       In a separate bowl, combine flour, baking soda, and salt

       Slowly add the dry mixture into the wet mix. Add a little more flour if the mix looks too wet.

       Gently add chips and chopped nuts and mix until just combined

       Gently form dough into balls, appx 1 Tbsp each

       If desired, roll each ball of cookie dough in sesame or poppy seeds.

       Place ball on ungreased sheet. Press down gently to flatten and garnish with a nut.

       Bake for 12 minutes and then check minute by minute after that.

If there is any indentation when you lightly touch a cookie then bake another minute until it doesn’t leave an indentation.
